Right, sorry to give you just a picture and no words to go with it. Baked eggs are something we like to do with certain kinds of leftovers -- it's especially good with ratatouille. The oven goes to 375, the vegetables go in the little baking dishes, the eggs go into little divots in the vegetables, a sprinkle of salt goes over the eggs, and the lot goes into the oven. Once the whites of the eggs are opaque, some cheese goes over the eggs (here, it's feta) and the whole thing goes under the broiler to toast the cheese.

ah! I thought it was ratatouille! looks wonderful. If only I had some ratatouille left from the last batch I made.

Thank you! It is good with lots of other sorts of vegetables too: sauteed peppers are good, or spinach -- actually I have more to say on the topic of the spinach version, I'll try to remember to post about it soon.

please do share. I've been all about "easy and quick" recently, and this sounds like one to add to the list of close-at-hand when you don't want to really cook techniques.
