Lucian Truscott writes an article that may actually inspire me to attempt pancakes on a weekday morning. Of course we don't have a nonstick griddle, only a cast-iron one, but it is pretty well seasoned. Forty minutes is actually rather a lot of time to imagine having in the morning around here, and we'd need a little extra time to get the coffee going, but he does make it sound alarmingly managable.
