Lately I have been thinking way too much about canned foods and gallons of water and crank-powered radios and keeping at least three quarters of a tank of gas in the car and really it just makes me tired and sad. But dinner out of a jar can, at least, be cheering and restorative.
It helps to have jars full of things that are specially worthy. Last night's supper was homemade flatbread (okay, not from a jar), delicious roasted piquillo peppers, enormous and wonderful kalamata olives in shockingly good olive oil, and labneh.
