I'd had visions of an elaborate meal, but preparing my lessons for tomorrow sapped my will to create. I was feeble and apologetic and unhungry, thanks to the combination of crunchy snacks and Edward II, but S. said tomatoes sounded like dinner to him. And lo, they were, and we ate like the favorites of kings.* It was even easy, almost embarrassingly so.
So, tomato salad and toast tonight. Here's how it goes down:
Dead ripe tomatoes, cut into wedges cut in half
1/4 of a medium yellow onion, chopped fine
Half a large blob of nice fresh mozarella, torn into bite-size bits
A fistful of basil, torn up
Salt
Pepper
A generous drizzle of olive oil
A hearty splash of vinegar
Toss it all together and let it sit while you toast some crusty bread, perhaps crusty bread that has gone stale. Juices will gather at the bottom of the bowl. Put the bowl in the center of the table and give everyone a bowl and their toast.
You will want to tear up some toast and then spoon some salad on top. Eat and then add more toast and more salad, as you go. Stop when you are full and happy.
