Over the weekend I baked up a pan of applesauce spice bars from Dorie Greenspan's Baking: From My Home to Yours. I pronounce them delicious, though I did a couple of things that I regret. I didn't have any corn syrup, so I substituted honey in the glaze. This worked fine, but I think that honey is more hygroscopic than corn syrup, making the glaze grow stickier over time.
I also put the bars in an airtight container in layers (with parchment between), in the refrigerator. I think that this also made the glaze gooier than it was supposed to be, and the lower layers especially got a bit gloppy. Still, very good, with a nice balance of sticky gooey treat and wholesome afterschool snack. (Or breakfast, in actual fact.) I wonder if I can find a nice 9" x 13" storage container for future batches.
Don't you love the book?
Your cake looks very good. Maybe slightly hygroscopic, but thankfully, not deliquescent. (I hate it when that happens.)

Gloopy, schloopy. Use a spoon.

I made them again, this time with corn syrup, and what do you know, they're damper yet -- partly because they're slightly underdone. I've been using a fork, but a spoon would also get the job done. And a good job it is, too.

I kind of like the honey idea.

Thanks! I love it too. And I think I will in fact probably go back to honey next time I make these.
