Leftover dragon's tongue beans and Parsi-style frittata, with some slightly wacky but very good ad-libs based on what we had in the house. (The coconut makes it!)
Plenty of olive oil
One large or two medium white onions, chopped very fine
One red pepper, chopped very fine
One or two teaspoons chile-garlic sauce
One clove garlic, minced
Equal amount ginger, minced
1/2 teaspoon ground cumin
A tablespoon of this crazy coconut stuff
Salt to taste
Six eggs
A cup of chopped cilantro
